Peanut Trix Squares

1 C sugar
1 C corn syrup
1 stick butter
2 C roasted, salted peanuts
1 C chocolate chips
4 C miniature marshmallows
6 C Trix cereal or similar favorite

1. Place cereal in a large bowl and set aside.
2. Butter a large 9x12 pan or similar and set aside
3. In a 5 quart saucepan, bring sugar, corn syrup and butter to a boil.
4. Add marshmallows and stir until completely melted.
5. Once the marshmallow mixture has melted, add the peanuts and chocolate chips.
6. Pour marshmallow mixture over the cereal.
7. Press mixture into a prepared pan, cool and cut into squares. Enjoy!

Banana Harvest Oatmeal

This weekend Bryan and I stayed in St. George one night. The next morning we found a new place for breakfast, called The Egg and I. It was kind of a diner-type eatery, and their special was the Banana Harvest Oatmeal. I had gone for a run earlier that morning and was feeling health-conscious, so I decided to try it. It was really hearty and filling; perfect for a snowy morning, like the one we were having. (Yes, it was snowing in St. George!) Anyway, it's not really a recipe, just oatmeal with toppings, but I thought I should write them down before I forget.

Oatmeal
2 T brown sugar
2 T golden raisins
1/2 banana, diced
2 T chopped walnuts
milk to taste

Stir together and enjoy!
